Hot sugar is super dangerous! As well as being sharp as hell once it's cooled, it also doesn't cool off nearly as quickly as butter or oil, should you accidentally come into contact, and can adhere itself to your skin.
I only experimented with carmelizing sugar one time. Made the mistake of letting it cool in the pan and it was well nigh impossible to get out. Didn't cut myself though luckily.
