Thank you! Will try it. I didn't know you could freeze pesto. I always worry because I don't know what to do with leftovers since I live by myself and cook for myself.
Yup!! My grandmother figured out how to freeze almost EVERYTHING. She'd make things in quanitity and keep them.
My aunt made a lot of things before she died, and froze them for my uncle. My mom tells me that just last week, he finished the last of the pesto she made!
Funny you should post this. I just made three batches of pesto a few nights ago and they are sitting in my freezer as I type.
Only thing is I use two cups of basil and no parsley. Probably another clove or so of garlic, dependiing on size.
I used to put in pinenuts then a dear Italian friend of mine said "Furgetaboutdem!" So I did and I liked it just fine. This year a dear polish friend of mine said "Oh you MUST put pine nuts in!" and since I'll be making a pesto dish for dinner at her house I decided I'd do it for her. Two batches had the pinenuts but I really was not wild about the texture (mind you this was after I had pulverized EVERYTHING in my processor) So batch #3 was sans nuts.
Mmm, this sounds delish! I've made a similar pesto, sans the parsley. I have a nice little herb garden this year, though, so I can always make BOTH. :)
The parsley thing is unique to my family, and as I said above, I think it adds a little bit of freshness to it. I *adore* basil, but it has a certain sweetness to it - parsley has a little zing.
Something I want to try is adding in a little lemongrass - I think it would be a good mix!
DAMN. Made pesto (three cups of basil worth) just on Saturday. Knew I should have posted a recipe request. Will add this to memories and break it out next time. Thanks so much for sharing!

Some people make it with walnuts, but I'm very allergic to them, so...no. :D
My family likes the parsley because basil IS very sweet - it adds a certain 'freshness' to it. Give it a try sometime!
