OH yes - you can totally add spices! Or ground red pepper flakes, or...WHATEVER. This is like the canvas. The rest is gravy. *grin*
The other great thing about this - it's so concentrated, and YUMMY, and the texture is like...silky - it coats the pasta perfectly when you toss it, and you don't need as much.
You know, a LOT of Sicilian food probably is vegan. Especially the recipes handed down to me from the Depression-era cooks. Cheap protein! Lots of beans, legumes, etc.
Even the meat recipes are scant on the meat - it's an accent rather than the main course. Often, eggs are substituted - in soups, especially. (I know, not VEGAN, but for lacto-ovos, it's good)
And tons of fish. Of course, Sicily IS an island :D

Honestly, I'm ...kinda weird. I love LOOKING at this sauce while cooking. It's captivating and magical. It gleams, but NOT in a greasy way.
