So I was making coffee this morning, and looking at the back of the packet of dark roast coffee... it said 'best if used within four weeks.' I don't drink that much coffee, so it's going to get stale, but whatever

Store your coffee in the freezer and it lasts longer.
If you have a french press you could try doing the cold coffee extract thingy, which apparently makes very non-bitter coffee. I can't stand the stuff so haven't tried it.
Rob goes by whatever Alton Brown, food science nerd of TV, suggests (usually ends up really strong). However, an interesting little trick that he notes that, again, according to Rob and AB (I'm an AB now too ^_^) if your coffee tastes bitter, add a small pinch of salt. They say it makes a crazy difference!
(coffee should only be used in ice cream and to dip peanutbutter cookies into, IMHO)
