I have a ton of rhubarb ready for harvesting in my yard that I have no idea what to do with. Would any of you like to have some? Also, could anyone give me some ideas/specific recipe instructions about what I can make with it?

My best girlfriend makes the most amazing cobbler, and she posted her recipe the other day. Here it is verbatim:

The perfect filling:

4 cups cut rhubarb

Sauce:

1 1/4 cups of water
3 tablespoons cornstarch
1 cup of white sugar
2 teaspoons vanilla

Mix the above ingredients together in a saucepan, bring to a boil to thicken. Remove from stove and stir in rhubarb until well coated.

I then pour this in to a baking dish.

I use a crumble mix and pat half of it on the bottom of the dish - pour the rhubarb mixture over that, top loosely with remaining crumble - bake at 350 for 45 minutes.

Only problem is, I don't know what she uses for the crumble mix! Probably that's how she keeps her cobbler in such high demand!

The filling worked like a charm. I found a decent crumble to put on top.

Mix together:

1C flour
1C light brown sugar
1/2 tsp salt

Rub in 1 stick of unsalted butter cut into pieces.
Work until it has the consistancy of cornmeal.

Form a large ball and break off larger pieces over the top of your filling to cover...
