I've always wanted and RPG game like D&D. People live in the world and decide if they are good or evil. Everything would be IC and I could go to a bar and get drunk or I could go out and save a village. The world would be persistent so when you cut down a tree it stays cut down and so on.

This is one option - it probably represents the greatest amount of work out of all of courses (have you seen Neverwinter Nights 2?) Might be weird to play D&D as a cat avatar though :P
