Briefly on #10. I don't know very much of Steve Reich's works but one whose title escapes me even if the theme has me in head lock, is autobiographical. This piece tells the story of cross country rail trips Reich made as a child. The rythm addresses the mechanical action of the steam locomotive pulling his train, laced with long shrill notes evoking it's whistle. The first time I heard it, I felt fortunate to be able to stand, transfixed, for the duration. (not working or driving a car at the time of the broadcast)

yoghurt - it's actually a collection of different bacteria, but when the population gets too crowded, one prevails, leading to sour, runny yoghurt. otherwise, you get firm and mild.

for a half gallon of milk, use less than a teaspoon of plain yoghurt as a starter.

My girlfriend is a bread enthusiast. Not for the same reasons you are, though she is working with a friend to do some medical research on the effects of glutens on us all.
