First of all, I'm pretty sure iTunes allows you to change any and all ID3 tags before and after the import; most definitely after. I do this all the time. Apple also doesn't moderate the CDDB database, and we all know it's full of errors. What do you mean by 'label'? Which tag are you trying to change that you cannot?
Second of all, I will try very hard not to take your huge, sweeping anti-Apple comments about laziness and software that isn't user-friendly too personally. I know people rant when they're mad and often exaggerate, so I'm not trying to start a huge flame-war over it. I just know that I work my ass off for the company, do a damn good job, and so do most of us there. Continuing to hit home runs with every product, every release, every time is some kind of unrealistic situation we've somehow put ourselves in.

Unfortunately Apple has no control over the CDDB. They could start their own I suppose, but that would be a PITA. You can modify the tags though, for several tracks at a time.
As for the basis for the company no longer existing, you're right. They haven't sold the Apple II in years. ;)

I'm more confused why my iTunes can't find the album artwork for albums that are in the iTunes store. But not enough to stop using it, or my ipodes.
