Can freshmen sign up for classes online before orientation?
(I'm trying to figure out if it's worth hurrying to get my measles immunity form turned in because almost all the classes I want are full)

it seems like I could find this out really easily but I can't!

Nope. You have to wait until your orientation day.

It's also worth noting that classes that are full now may very well open up at some point. Between now and, what - September ~30? - lots of people will drop classes, switch sections, etc. There's usually a lot of dropping a few days before the quarter starts, as well as in the first week. You can switch your schedule around during the first week without paying any extra money. Some classes are willing to except an overload of students, while some aren't, but the rule of thumb is show up the first few days to 1) try and get on a waitlist and 2) not miss any class info in case you do end up getting in.
