I like the Forwell trail for a nice walk through nature. If you go down University past Marsland you'll see an entrance on your left. Explore and exit as desired.

There's tons. Especially if you've got a bike: my favourite Waterloo bike foray is to go north to the St. Jacob's Market, then take the ~5km Trans-Canada Trail to St. Jacob's itself. (The trail starts halfway up a farmer's driveway, next to the highway interchange.)
