I would say the average damage, longer lifespan would be best, but on NM like Faf at most one or two BLM should buy it, but not a lot of them.
When we have the melee to pull off Light or Fragmentation, we'll often just MB him to death and of course bets start happening to see which BLM will die first.
-Enmity comes into play a lot and can help out.
Way back, when we first started doing Faf, we did a couple of AM1 element walks around the elemental wheel. The reduction to strong element is nice and is noticable, but it does pull a lot of hate.
AM2 is nice for finishing off mobs though.

I always wondered what the usefullness of the Etheral was going to be - good to know it has some uses. I took the Conserve MP +5 earring instead, it is a shame you can't redo the quest to get new earrings and try them out.
On Fafnir, you do more damage with less hate by casting Water/Thunder 2/3.
AM2 are incredibly useful when you need to "push" something down once their HP gets low. But on something like Faf, just do consistant damage (like you said, 800 damage for a T3 is nothing to scoff at) rather than go for the ePeen.

I think that sums up my opinions.
