thats funny you posted this because I just bought a few boxes of suagr free jell-o i used to practically live off that and cucumbers & I was wondering what else i could do with it. if you try it, post how it came out.

I've had problems getting the coffee to not sink towards the bottom when the gelatin sets, leaving a gross unflavored mass at the top. :/ There must be some kind of secret to this I haven't figured out yet!
have you tried preparing the coffee, then adding it to the gelatin? that should hope since they're both liquid at that point, and the temperature is kinda the same too?
I just dissolved the coffee right into the boiling gelatin (it's an instant type). It looked fine until it started to get firm... I think it might work better if I let the gelatin cool and set up for an hour or so before mixing in the coffee?
maybe that would work... there must be some chemistry to it, the coffee should be acting like water to the gelatin. what if you brewed the coffee first, and mixed that with the gelatin mixture?
I think that would help. The tiny particles of coffee must be too heavy for the gelatin to suspend, until it sets up. Probably brewed coffee that's been through a paper filter would work out better, less granules to deal with!
