This isn't a remarkable recipe for chili at all, but it's really quite good and easy. It freezes well, too ( Read more... )

I have an English friend who SWEARS by Quorn. Are you in the states? Is that something you can get in the states?

Yes, I'm in Rochester NY. But that means that I have access to the Greatest Grocery Chain Ever In The History Of The World. Yes, I'm talking about Wegmans.

However, Quorn is available in the US. They have a store locator here. My vegetarian daughter tells me that just because this store locator says that a chain carries Quorn, that doesn't mean that all stores in the chain do. Check with your own store.

Wooooah, where in Rochester are you? I live in Farmington, was just at the Canandaigua Weggies tonight. Small world!

I live on the east side of the city. It IS a small world! And, lucky you, you have Wegmans too!

Thanks for posting the recipe! I love Quorn too. Luckily our local chain (Ingles) carries tons of veggie stuff.

Quick chili question: last time I made chili in the crockpot, the flavors were kinda flat. I used my normal amount of seasonings (3T chili powder, 1T each cumin & cayenne), but it just didn't have the usual spice and zip. Would precooking the onions & garlic have helped that much, or is there something else I should have done? Here's the recipe:

Vegetarian 3 Bean Chili
2 cups each kidney, garbanzo & black beans
4-6 cups diced tomatoes
1 cup frozen corn (optional)
1 cup chopped onion
3-4 cloves garlic, minced
3T chili powder
1T each cayenne, cumin
1-2T each lemon, line juices

stove top: saute onion & garlic 3-4 minutes, then add spices and lemon/lime juices and cook 1-2 minutes more. Add remaining ingredients and bring to a boil. Reduce heat; simmer 30-45 minutes or until flavors have blended.

crockpot: I had just dumped everything into the 6-qt crock, but see above for problems with the spices.

First, I have to admit I've never made chili in a slow cooker, but I've done a lot of cooking over the course of my little life and I've learned it's very important to understand your ingredients and how they'll behave under given circumstances ( ... )
