I'm pretty certain they can't force you to disect, unless you're in med school or something. Talk to your teacher the first day. UF is pretty open to diversity and I'm sure it's not the first time your professor will have heard such a request.
thank you for your reply. So far I've found out the animals are: a crayfish, earthworm, and a fetal pig...and that usually you have 2 lab partners and can talk to your TA and just observe while someone else dissects..you aren't graded on your dissecting..just the anatomy
I ran the animal rights group at UF for a number of years, Animal Activists of Alachua. We tried (extremely hard) to ascertain students' right to non-animal models. It didn't fly, but several of our members were able to bypass dissection. I wouldn't recommend waiting for the first day of class. Go ahead and approach them now and see what they have to say. You will most likely be given alternatives. You can always contact animal protection groups for their resources (computer programs, fake animal models, etc):
