I make something similar! I triple it, add 10-14oz bean thread, a cucumber sliced into sticks and a handful of shredded carrots. Plus some kind of protein (tofu, cashews, Beyond Meat) for a gf meal. :)

We put it on GF pasta last night and it was excellent. It would work great on rice noodles too.
