I've never found a sliced vegan cheese, although I haven't looked very hard. I'm much more into the melty kind! :p I know you can buy Daiya by the brick from stores that carry it bulk and cut it up. Usually local natural food type stores.

Very interesting article! Though all that talk about science and mixing gums together has totally put me off eating vegan cheese for a while, lol!

Haha, it definitely sounds a little unappealing, but I think they mostly come from plants... so I just try to remind myself of that!
