Here's a recipe for a pretty cool curry quinoa, that I've tried in Vancouver. We were staying up in North Vancouver, where all restaurants are closed at night, and not so many vegan places were available. So we've been frequenting a local Sobeys deli section. Luckily we found this vegan dish, but I have to say when made at home it's much more delicious! :)
Ingredients:
- 1/2 cup cooked quinoa
- 1/2 medium white onion, chopped
- 2 cloves garlic, chopped
- 1/3 cup virgin olive oil
- 2 tsp cumin
- 1 tsp yellow curry powder
- cayenne pepper to taste
- black pepper to taste
- 1/2 tsp sea salt
- 2 large basil leaves chopped
- 3 tbsp chopped dill
- 2 white mushrooms, cut
- 1 cup frozen peas
Preparation:
Into a large skillet pour olive oil, add chopped onion and garlic, curry and cumin, mix well. Fry for about 10min on low setting. After the onion turns golden, add cut mushrooms, dill, basil, salt, cayenne and black pepper. Add the peas, mix well, and cook for another 3-5 min. After that mix in the cooked quinoa. It's ready! Garnish with basil leaves and some tomatoes :)
