I've been on a baking and cooking spree lately, and decided I needed to throw in a breakfast item. So I made coffee cake.
Apple Coffee Cake
3/4 cup soymilk
1 teaspoon vinegar
2 1/4 cups all purpose flour; divided use
1 cup sugar; divided use
2 teaspoons ground cinnamon; divided use
1 teaspoon ground nutmeg; divided use
1/3 cup canola or vegetable oil
1/2 cup unsweetened applesauce
2 teaspoons pure vanilla extract
1 tablespoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground allspice
1 granny smith apple; chopped
Preheat oven to 375 degrees F. Lightly grease an 8 inch square pan or bread pan. Stir the vinegar into the soymilk, and set aside. In a small mixing bowl, mix together 1 cup flour, 2/3 cup sugar, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg. Drizzle in the oil a little at a time. Stir the mixture using a butter knife until large crumbs form. In a large mixing bowl, combine the milk mixture, 1/3 cup sugar, the applesauce, and the vanilla. Sift in 1 1/4 cups flour, baking powder, salt, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, ginger, and allspice. Stir until smooth. Fold in the apple. Pour the batter into the prepared pan. Evenly sprinkle on the topping mix. Bake for 35 to 40 minutes.
