I'd say 4-6 servings. And it freezes well. I have some in my freezer right now.

I have some stale tortillas, do you think that would work in this? I've been wondering about what to do with them otherwise (they're not easy to get here so I don't want to just toss them), and if they're getting baked anyways...

I am not following when you say the word "chicken" in quotation marks but this is listed as a vegetarian recipe. So what exactly are you saying that you are using if it isn't chicken? If you don't mind me asking.

A faux-chicken product. They are often sold in the freezer section of grocery stores. MorningStar, Quorn, Boca, and Smartlife are some common brands.
