Hot Weather!

Hello, everyone!

What do you eat when it's really hot out? We usually default to salad, but I'm looking for a little more variety and I would love to hear what others do.

Hummus, pita bread, and chopped veggies always go over well. I usually buy pre-made spinach pies and stuffed grape leaves to go with.

Hummus wraps! We're also obsessed w/ brie sandwiches - brie, arugula, and cranberry spread. Yummmm.

We also like tacos - just warm up refried beans until they're not cold. I personally like them w/ cool black beans, but my husband does not.

Grill! Grilled veggie burgers are great. We also make potato packets a lot, which is one of my favorite things about summer. They're simple: chop up some potatoes bite-sized, stir in pesto, cheese, salt, and other herbs, and wrap it up in foil. They take about 20 minutes to cook. You can make single-serving pizzas and grill them too. Grill the crust, add the sauce, cheese, and toppings, and grill it just a little bit longer.

There's lots more you can do. Just search the internet and I'm sure you'll find lots of ideas. :)
