What are your best, hands down, cook over and over again recipes? Do you have a favorite veggie blog? My husband and I are eating vegetarian three to four times a week due to health issues (too much lactic acid, borderline high cholesterol) and I'm struggling to find ideas that will satisfy him since he's a meat and potatoes kind of guy.

Hummus and pita bread is good to have around the house to eat. Add green olives and and some cut up veggies and you have a nice appetizer or just a snack food to have on hand.
I make this falafel recipe on a Sunday and then freeze it. On a weekday, I have the falafel, some tzatziki, diced tomato and romaine lettuce on a pita which is very filling. You could also have it with tahini, hummus or something else instead of the tzatziki.
I was also eating a lot of Indian food. Chana masala with some homemade grilled naan is really good and filling. It's nice to have with basmati rice and fresh fruit. It can be pretty spicy.
Lastly we make a vegetarian crockpot "chili" that is pretty tasty. 2 cans diced tomatoes (with green chilies), 1 can of seasoned pinto beans, 1 can of kidney beans, and a ( ... )

My favorite recipe is farfalle & sage. It's sort of like Pasta Aglio et olio only using a full bunch of chopped sage with only a touch of garlic.

The original recipe called for ground beef. I have made it with ground turkey. I also plan to try a fully vegetarian version, with meat substitute, and I keep tweaking what other veggies go in. I will come back and post a version from home tonight. It makes four decent-sized servings, and I do note that it tends to taste better the next day, so I'm considering making it a day ahead. It takes maybe 20 minutes of prep, then 30 minutes or so on stovetop. You can put in zucchini, spinach, bell peppers, anything.....
