I have 2kg of onions in a fruit and veg pack that I bought last week. I'm sneaking them into most of the sauces, etc I cook (my kids don't eat them) and the side dishes (mash, polenta, risotto, pasta), but when I buy another pack on Monday, I'm still going to have heaps left

You can freeze chopped onion, (cooked or uncooked) then just grab a handful out of the freezer as you need it, if that helps?
