Onions!!!

I have 2kg of onions in a fruit and veg pack that I bought last week. I'm sneaking them into most of the sauces, etc I cook (my kids don't eat them) and the side dishes (mash, polenta, risotto, pasta), but when I buy another pack on Monday, I'm still going to have heaps left ( Read more... )

onion rings, im pretty sure even non onion lovers at least like them a bit

put them into pakoras and bhajis too

I totally agree with OpheliaHeart on the onion rings deal. Only, I would make them -tons- healthier by coating them in what ever your heart desiers and then baking them on a sheet tray/cooling rack combo. No oil means less fat, and keeping them up off the sheet tray with the cooling rack means even baking all around. Might mean a bit longer to cook, but it pays off in the end!

My first suggestion was going to be chutney, but if you don't do preserving that won't help. (Unless you want to chutneys to use as christmas gifts even if your family won't eat them? We always give everyone chutneys for Christmas, and people are still raving about in August!)

You can freeze chopped onion, (cooked or uncooked) then just grab a handful out of the freezer as you need it, if that helps?
