Does anyone know any really quick, really cheap vegan recipes that can be done using only a hotplate? There's a girl at the homeless shelter I work in who's vegan and so far she's had beans, couscous, couscous and beans...

Chickpea salad. Make it just like you would make egg salad or tuna salad, only use a can of chickpeas instead. You can mash them with a fork (I just pulse them in my food processor a few times), then just add veganaise and whatever you'd put in your egg/tuna salad. Most people like mustard or relish, but I hate that stuff so I just add salt, pepper, dried chopped onion, paprika, and if I have any handy, some diced celery and carrots for a little crunch. But it's as easy as chickpeas, vegenaise, salt, pepper, if you're lazy/out of ingredients. Add bread and BAM! Sammich time.

Anything made with hamburger, you can use TVP instead. Sometimes I make stew using mushrooms instead of meat. I also make potato chili.

ramen noodles... if you buy the veggie flavour they are vegan, in fact if you buy any of the Mr. Noodles brand there is never any meat involved. at 30-odd cents a shot they were a staple during my unemployed period, there are many many many different meals that can be made based on these noddles.

For example: thai peanut soup.
Ingredients:
1 package ramen noodles + one half of spice pack included.
1 heaping spoon of peanut butter
1 dash of low sodium soy sauce.

Make noodles like it says on package, then add half pack of soup mix, peanut butter and soy sauce.
et voila, yummy protein filled calories!

4 cups chopped apples and pears

2 tablespoons sugar

1 tablespoon vegan margarine

1 teaspoon cinnamon

¼ teaspoon nutmeg

¼ cup raisins

Crumble topping:

1 cup rolled oats

1 teaspoon cinnamon

½ cup brown sugar, packed tightly

¼ cup whole wheat flour

¼ cup oil

Put the first seven ingredients into a pot with a lid over low to medium heat and simmer for about 10 minutes.

Put the crumble topping ingredients into a bowl and mix together well. Add canola oil and stir. Put into a nonstick skillet on over low to medium heat and stir till oatmeal begins to brown. Spoon the apple-pear mixture into bowls and top with the crumble mixture.
