what do you do with cans of peas and carrots? the awful kind where the carrots are cut into weird cubes. i plan on making a brisket and adding a couple of cans to it in the last hour, but that still leaves me with, oh, eight cans left.

So, you could make shepherd's pie. Canned veggies of that type are generally pretty inoffensive as the veggie component of that dish, especially if you season them a bit before you throw them in.
