Spinach

Anyone know any good, relatively low fatish recipes for spinach? Have a bag of fresh in the fridge which is going to wilt horribly in the next day or so!

EDIT: Helpful suggestions only please....any others will be deleted.

Stupid as it may sound, I tend to just sit and munch it while doing other things. It's also good wilted down with a tiny bit of water and then run so grain mustard through it as a veg dish.

You can also freeze it down in ice cube trays (either cooked or raw) and add it to curries as and when making them. Spinish in curries is great.

shred it, cook it till done, add feta or cream cheese. Yummy!

if you dont' like it by itself, previous recipe plus a few potatoes mashed, and a carrot chopped up in there too.

Called 'stampot' in dutch.

Low fat wise, sauté garlic in a touch of olive oil on a low heat, then add the spinach and cook until it wilts, then squeeze fresh lemon over it. It's really easy and tastes good. You can then stuff it into a pita bread with halloumi cheese. :)

No, they are about the only bread thing I can have! I may actually have that as a side accompaniment to the chicken dish am planning for tonight.
