My second master's was a Master of Arts in Liberal Studies, offered through the University College of the University of Memphis. It's designed to let students select courses from across the entire university that will fit into their own degree program (also self-designed). The courses I took included sacred music, contemporary trends in sacred music, linguistics, psychology of memory, counseling and literary analysis (with a focus on young adult/children's lit).
