Spring Leek Frittata

 Thesee flavors are mouth watering. It could easily pass as a main dish for a seasonal brunch, but is easy enough to be served for breakfast (or dinner!) anytime.

Spring  Leek Frittata:
Ingredients:
2 1/2 tsp. olive oil 
2 medium leeks
2 garlic cloves, minced
1/2 cup ham, diced
2 eggs
5 egg whites
1/4 cup milk
1 tsp. dried basil
1/2 tsp. dried thyme

This sounds so tasty. We've gotten leeks in our CSA box a few times and haven't been sure what to do with them. I'll keep this in mind for future leek use!
