Fermenting

It's time for me to get back to experimenting with fermentation.  There's evidence of vegetable fermentation from potsherds in a Viking context, and it's a fun area of experimentation.  Last night I started two batches of sauerkraut, which take about 3 days to be ready for consumption.  But I've done that one before, so this year I need to come up ( Read more... )

Very cool! I recently had an experience with accidential fermenting with an Italian recipe, not as much fun when don't mean to do it. :)

I'm going to be doing some more experiments with different containers, and different durations.

Last night Steingrim was describing a Scandawhovian breakfast that he thought sounded yucky but I though might be good ... miscellaneous grains (oats, millet, barley, etc.) cooked in sour whey with sour butter and dried fish flakes. I don't know the provenance of this, but it could be good.
