That's good fish

I hit on a winner last night.  Even the picky girl liked it.  She went back for thirds, even, which pretty much never happens with her unless dinner consists of mac & cheese or snickers bars.

On a large piece on tinfoil, I laid down a thick layer of baby spinach leaves, and on top of that sliced tomato.

M has been going hiking after work on Wednesdays with a group from work. They tend to go out towards the coast - yesterday they did Saddle Mountain. She's loving it.

I bet she'd be willing to go out some evening if you're game and can get off work right at 5.

the fish with cocoanut milk sounds really familiar...my mom used to take white fish and spread it with mayo and bake it. sounds gross but it would totally keep the fish from drying out (even cheapo fish like she'd buy)

boy, this tiki food is NOT low in fat, is it? ;)

yeah, Svava's stepmom uses mayo on her salmon when she bakes it too, or sometimes ranch dressing.
True, not low in fat, although coconut oil is at least good fat. The traditional Polynesian diet is very low in fat, since most of the calories come from carbs. Looking at the vintage "Hawaiian" cookbooks I got at powell's they are typical 50s-60s recipes for entertaining, so VERY hight in fat. Not the kind of thing you'd want to eat everyday.
I could have used "light" coconut milk on the fish too, which would make a little difference.
