Sweet & Sour Beets

Back in July, suzybel  posted a recipe for sweet & sour beets:

Now beets are good for you, especially men and their, um, plumbing. So I've read. I've been trying to learn to like beets- I like most vegetables, but for some reason, beets always have an oddly sweet dirt taste to me.

I happen to really like beets when they are prepared certain ways, and I absolutely love the sweet dirt taste of them. I've had some fresh peeled roasted beets from a restaurant down the street that were tossed with some crumbled goat cheese and candied pecans that were to die for. I peed pink for two days (I know, TMI - but its amusing). They were absolutely delicious.

I want to like beets, too. They sound really good in a lot of things, but I think the pickled beets (to say nothing of pickled beet eggs D:) I was exposed to in childhood kind of ruined them for me.

When I was very young, my mother and my grandmother used to can beets and hardboiled eggs together, so we'd get purple "pickled" eggs. I don't know if they were truly pickled; they just tasted like beet eggs, really. They weren't bad, but were never a favorite of mine. Except the color. I liked the color.

Canned beets are terrible. If that is your only exposure to them, it's no wonder you don't like them. Try to find them jarred if not at least fresh.

Jarred pickled beets is heaven in a piece of glass. I'm having a mouthgasm just thinking about them!

Okay i am on a lot of different communities here and none of them made me laugh as much as your comment about sweet dirt..lol..all i can say between the laughter is better sweet dirt than just plan ole dirt ya know what i am saying here..lol..keep up the beet thing, if anything the color is a huge happy motivator...
