I've never had reason to look for either, so I can't be helpful with specifics, but I do know that sometimes the lower end stores (Price Chopper, No Frills, etc) have stuff that Zehrs or Sobeys don't. It wouldn't surprise me to find either of the items you're looking for there.

Chicken sausage and pickled herring... my dear it sounds like you need to find yourself a good (and possibly ethic) deli/butcher, preferably Polish. Or a pan-European food store like Brent Park. I know a good one in Ottawa XD... but Waterloo cannot be the size it is (with a German population!) without at least one.

I like smoked salmon on plain cream cheese on some kind of carb. It is breakfast food at my aunts and kicks the pants off of smoked salmon cream cheese. You may also want to try it with a nice goat or sheep cheese as they will be as easily spread but have a bit more tang.
