Almost a year

 since I last posted, and this post is mostly going to be talking to myself - but I need to alleviate some stress. Actually I don't think anything will be allieveated, but I need to rant.

I am so stressed out about my upcoming feast. It is a cuisine I am completely unfamiliar with and am having a difficult time getting a handle on. And the format is ( Read more... )

Okay, first you need to breathe.

Then, on your worries about it not being yummy ... I am a picky eater. Not so bad as I used to be, but still pretty picky. I have eaten enough of your feasts at this point in time to tell you with all sincerity and honesty, I will eat damn near anything that you put in front of me. You are that good of a cook, and I have that much faith in your skills. You can succeed, and you will.

Now, on to the fear, which is what you are expressing. Fear can be a very good thing if you use it the right way. It's a sign that you are being pushed out of your comfort zone and that you are being challenged. As much faith as I have in your culinary skills, I have even more faith in your personal resilience and strength in rising to this challenge, pushing yourself in directions you didn't know you could go, and coming out the other side with confidence in lessons learned.

You're an excellent cook. You've worked with challenging situations before. Those pointy hats all put their crowns on one point at a time. ;-) Clifford Wright's 'A Mediterranean Feast' was always a good jumping off point, as I recall. I'm sure you'll do South Downs proud.

As far out of the loop as I am, I doubt I can be of any use to you; but if you think of something I can help you with, let me know.

Serena! We can have tandem anxiety attacks! I have six weeks left and I'm FREAKING OUT over basically the same things you've listed here. Call me and we can freak out together.

Allergic to almonds suuuuuuuuuuuuuuucks.

I cannot WAIT until my feast is effing OVER and I can relax and look forward to coming up to Red Tower and working in your kitchen. 'cause I'm soooooo looking forward to it. I know it's going to be great, ESPECIALLY because you're really pushing your boundaries here and that's just *cool*.

People aren't going to think food in meridies sucks after one of your feasts! Jeez!LOL, you rock the casbah on this stuff...

Expliaining why you did what you did works...just put it in your documentation. If you need someone to bang ideas against, feel free to give me a call!

Marzipan = almond paste, so if he doesn't do almonds because he's allergic, the reaction may have been to that. Try hazelnut paste. Maybe. I'm not sure what nuts are period for Turkey in period.
