I cheated tonight and used the bottled stuff, which turned out surprisingly well. However, this is a recipe for doing it from scratch: Pasta alla Vodka. It's a tomato cream sauce with vodka--yum!

Yo, I can also recommend how easy a vegetable/rice soup thingy is.

6 c water
4 cubes bullion (maybe 5, taste to see)

See if your grocery store has a prepackaged thing of veggies like leeks, carrots, celery, cabbage, potato or two, maybe a zucchini, otherwise it's not quiiiite as simple. If not, chop up whatever you want to put in it!

2-3 chicken breast filets sliced small. Throw those in with 5 mins to go.
Couple handfuls of rice (with 10-15 mins 'til end, depending on the rice).

Soooooo easy and fast and good! I think it cooks for around 30-40 mins.
