For the same reason why Electrical Engineering books show voltage as arrows, +'s and -'s and other such Graphical adaptations. Its to help people grasp a concept by using pictures.

As a person with a degree in Electrical Eng, I studied Eigen Values, Fourier transformations, Heisenberg's uncertainty principle and a bunch of other stuff that explained alot of what is questioned.
