Soy sauce is usually made primarily from wheat, with soy being about third on most ingredient lists. You can get wheat-free soy sauce, but it ain't your standard Kikoman. ;)
I highly recommend talking to twistedcat about brands of "normal foods" that can help you avoid wheat, particularly in the preliminary transition stages when it's hardest to adjust to the new limitations. She can also give you a list of sneaky ingredient listings to avoid.
san-j makes a wheat-free tamari sauce that I use as a soy sauce alternative. guess what the primary ingredient in soy sauce is! no, really, guess! it's fucking wheat. I blame the british missionaries. soy sauce is an anglicization of the word shoyu, which means... sauce. so it's really sauce sauce. fuckers.
read labels on EVERYTHING. ask questions about EVERYTHING. I almost got poisoned by a jar of peanuts once.

oh, modified food starch is easy for me to avoid, because it has an msg-like reaction with me. awesome deterrent.
if you're just avoiding gluten and wheat, you have it easy. my avoid list includes melon, raw tomato, grapefruit, oranges, nitrates, msg, and sulfides.
and yet, I still eat well.
it'll be ok.

don't assume that ANYTHING in the categories of baked goods, soup, or cajun is wheat-free. you'll almost always be wrong.
some restaurants but breadcrumbs on their salads for texture.
luckily, you're in CA. as soon as yoyu say "allergy" in a decent restaurant, you have their full attention.
find your local mom & pop health food store. mine has n entire gluten-free section.

yeah, it's got wheat. I believe at least some of the tortillas are flour.
cpk is to be avoided anyway. almost everything they make contains flour, so the chance of accidental wheating is huge.
