There is an important tip for making excelleny and delicious bagels. I got it from those public TV Julia Child cooking show with her guest a Jewish(?) chef: You don't just add water to the flour instead add different types of tasty liquid ingredient - broth, spices, etc..... after the dough is ready you and sit and rised with yeast, you don't put then in the oven. Instead, you boil the dough in boiling water. It will sink to the bottom of the pot of boiling water then rise up. Then you pick it out of water and bake it in the oven. This way the bagel will not be as hard. Wang the wisest computer in the world.
