Leftovers are Great Lunches

Even though I love to cook, the whole idea behind it is to have food for several days so that I’m not cooking from scratch every single day.  That’s why I make a different sandwich spread every week and extra amounts of my recipes.

The roll-up looks delicious! I love avocado. (I would have to lose the artichokes though.) I've developed a terrible habit of not really eating "meals", but instead snacking all day. Maybe I'll make you my food mentor!
