They are actually not at all difficult to train to do that. Cockatoos particularly will bob up and down like that naturally, that's one of the ways they play. One bobbed at me like that and held out a foot to be picked up. (And then when I let it on my arm it wouldn't get down and tried to bite my arm off when I put it back in its cage, um. They are demanding birds.)
