Aw, I get it! They're both wild and unpredictable, and their good deeds have to look like up-to-no-good or they get embarrassed. He wants to take care of her and keep her on the right side of the law. He wants her to feel encouraged and accepted since she doesn't have any family worth mentioning. They get the same sense of fun and satisfaction in getting away with capers, even when there's no real money or gloating involved. Mel gets away with teasing him like no one else could, because he Oz knows she's loyal. He gave her half his bagel; it was almost like licking her muffin!
As for Dutch, he's a little too goofy and dumb for a girl who grew up with a conman father. Cam is nice, but he'd get crushed under one of her adventures and Mel would have to lose a friend.
