And thank you for the well-wishes. Unfortunately one ovary was cancerous (& the size of a basketball, no joke), so we're waiting to hear if it spread anywhere else. The dr said it didn't look like it spread & that he got it all, so here's hoping! And I live at home, so helping my mom is the least I can do for her (& my father).
Thank you so much ♥ My father had prostate cancer almost 3 years ago, so unfortunately this isn't my first experience having a parent with cancer. I think that has been helpful, though obviously ovarian (& breast!) cancer is more serious than prostate (which, though aggressive, was caught early).
And yes, I am *definitely* finding out who my real friends/family are - which is disappointing, but it is what it is. I won't even get started on my useless brother... *sigh*
This is one of my teenage son's favorite meals, and he really dislikes most vegetables or stew-type dishes. It's actually much much tastier than it sounds, I promise!
(As an aside, I really don't measure these ingredients. I throw in what I have or until the pot is full, doubling the soup/water if necessary)
Crockpot Burger Heaven Casserole
16 ounces extra lean ground beef 2 cups sliced raw potatoes 1 1/2 cups sliced carrots 1 cup chopped celery 1/2 cup chopped onion 1 cup frozen peas, thawed 1 cup frozen whole kernel corn, thawed 1 (10 ounce) can Tomato Soup 1/2 cup water 1 teaspoon dried parsley flakes Salt and pepper and garlic powder to taste.
Spray crockpot with cooking spray. In large skillet brown meat, onion and celery. Combine meat mixture, potatoes, carrots, peas and corn in crockpot. Stir in tomato soup, water, parsley flakes and salt and pepper to taste.
Cover and cook on LOW for 6 to 8 hours.
I like to serve this with a cheddar-garlic biscuit (Red Lobster copycat recipe). So good!

Easy Beef Stew - 2 lbs cubed beef, coated in 1/2 c flour + salt & pepper - 1-3 c cubed potatoes - 1-3 other random veggies (onions, carrots, celery, mixed frozen whatever) - 2-3 c broth - 1-2 tsp of spices: worcestershire sauce if you need more salt (depends a lot on what kind of broth you use), paprika if you need more pepper, chili powder if you want a bit of spice, garlic if you like it
Dump in crockpot, cook on low for 6-10 hours. dip with bread. Totally familiar and comfy, but also pretty healthy! Vary up the ingredients to your taste. I just made a double batch yesterday and everybody loved it.
Thank you, I did (roughly) this last night! I did 1 lb beef, 1qt beef broth, 2-3 cups mirepoix, 2 diced potatoes, and a brown gravy packet. It smelled SO GOOD and I was so pumped to eat it for dinner, until family friends brought over a rotisserie chicken instead! LOL! So, we're having it tonight, along with leftover French bread (that the family friends also brought). I will probably add in some Worcestershire sauce. Thanks again!
Take a couple of packages of boneless ribs -- family-size packages. Dump in the crock, and pour a bottle of your favorite barbecue sauce over everything. (You might want to add the sauce as you're dumping the ribs, just to make sure everything is thoroughly covered. Add a little more sauce if you think it's necessary, turn the cooker on low, and walk away for several hours.
Of course, the size of your cooker will determine how much meat you use. This also works well with a roast. And you don't really need to do any other seasoning, because the barbecue sauce should have all the seasoning you need in it.
I see someone already gave a beef stew recipe which was mainly what I was going to suggest.
You can also throw a bunch of chicken breasts with a little stock and BBQ sauce or similar to put on sandwiches. I also do a pork shoulder with OJ, garlic, bay leaves, salt and pepper for pulled pork.
