I think your analysis is correct. Unfortunately for Mexico, Texas was too far north for the government in Mexico City to keep under control forever. They were bound to lose it to the Texians eventually. The same with Alta California, where the Californios also staged a successful rebellion against Centralist authority in 1836. I'll be getting to that little-known revolt here shortly. ;)

I believe Hispanics now constitute a majority in California. I have no problem with that. :) Mexicans are basically good, decent people, and Mexican-Americans in some ways make better citizens than many Anglo-Americans nowadays. Anglos seem to take everything for granted. The Mexicans who have come here worked hard for everything they have, and appreciate our freedoms more because of it, I think.
