Epoisses is a soft french cheese, you can get it at the supermaket. Heirloom tomatoes are the old varieties.
I love putting flowers in a salad, especially in spring: nasturtium, pea flower, or the lovely yellow flowers of pak choi gone to seed. You're missing out on raw scotch bonnet, too - it's lovely in a good fresh salsa, although habanero has a nicer flavour and less raw heat.

I'm not so sure I could cope with the heat of raw scotch bonnet, but I'll give a try some time.
