I really want to write a book. It's something that I've wanted to do for a long time, but I never seem to get anywhere when I actually try to write. I think the problem is character development; if I was writing fanfiction, I'd have no problem

I like the fairy-tale retelling idea! I always enjoy reading those if they're well written and creative. Maybe you could utilize a more obscure fairy tale, and that would set you apart from everyone else who's just reworking "Beauty and the Beast" and "Cinderella."
