This post induced recovering sysadmin PTSD. The amount of hassle I used to have with automount was ... unreasonable.

Oh, that's odd. I've never found automount to be any trouble at all (at least, not beyond very basic things like getting that +dir directive to work). The problem in this case isn't really an autofs issue: it's the cut down nature for the Raspbian installation, and (I presume) a bug in the Debian package configuration that doesn't ensure that RPCbind has been started. (Quite possibly, the package just assumes it is running, and it's Raspbian's failure).
