I've been running postfix as my home mail server for the last several years, and prefer to have that configured as the mail server on my phone. This is actually a hang-over from having multiple ISPs (and multiple people in the house, all with their own existing mail accounts). For the VPN setup, although I was specifically looking for Raspberry Pi instructions, the stuff I found doesn't have anything that's Pi specific. It should work just as easily on any Debian system (or derivation, such as Ubuntu). For any other Linux system, I'd imagine that the only changes would be installing the packages themselves.
In my case, I followed the VPN setup instructions, skipped the Router instructions (and then had to come back to them, to check which port I had to open!), as I'm already registered with a dynamic DNS service, so I can easily find my home machine from outside, and then went straight to the Android setup. Which is really, pretty trivial!
