I haven't made this in a while, but for some reason I am craving it today. The original recipe called for plums, but I found that to be way too sweet and substituted mangoes. Goes great over rice as a main meal if you're a vegetarian, or as a side dish with Jamaican jerk chicken if you're not.
1 or 2 mangoes, depending on size, chopped
1/2 tbs olive oil
1 large yellow onion, chopped
1 large red pepper, corded, seeded, and diced
1 large yellow pepper, corded, seeded, and diced
2 garlic cloves, crushed and minced
2 whole cloves
2 tsp cumin
1 tsp dried oregano
pinch cayenne pepper (or to taste)
1/2 cup minced fresh cilantro
2 tsp fresh lemon juice
1 tsp light honey
2 cups cooked black beans, well drained (rinsed if canned)
salt to taste.
Peel your mangos and dice them.
Heat oil in large skillet. Add onion, red and yellow peppers, garlic, spices, and fresh cilantro. Saute over medium heat until onion is translucent.
Stir lemon juice, honey, and mangoes into onion mixture. Add the black beans, stir, and cover. Turn heat down to low and continue to cook about 30 minutes or until peppers are soft, stirring often. Season with salt as needed and serve warm.
