My last experiment was thinly-sliced Bartlett pear, sharp white cheddar, and a combo of Miracle Whip and one of those roasted red pepper bread spreads. Really good.
Yours sounds good, too.
Time to bake another turkey breast, methinks.

Having done AB's recipe, though, I think I'm going to go with bacon for mine. WF sells this German smoked bacon at their meat counter that I used for a strata recipe just after Thanksgiving that imparted this deep smoky flavor. I think it'd bring *lovely* flavor to the greens.
I'm also being a heathen and going with red beans and rice with the collards, because I can't stand black-eyed peas. I guess I just get good fortune and not good luck. :)
