Well, dinner on Saturday took a lot of work, but it came off pretty well. I definitely should have played with a couple of the recipes before hand (the fennel salad and the scallops in particular), but things worked out ok. Here are two of the recipes that worked great.

Happy birthday! What about canned salmon in this recipe?

Canned and pre-cooked salmon are both a no-go for this. This recipe draws on the collagen in the raw salmon to help keep the cakes together. Even the frozen salmon required extra tinkering (see above) to make it work well.
