Dinner Thoughts

So, I want to make a pasta dinner with fresh cherry tomatoes, corn, onion, and summer squash. It seems reasonable to me if I saute all of this together, it will make a bit of a sauce. My question is whether I should add something like chicken broth to give it more of a saucy feel. I was then thinking of melting fresh mozzarella on top of everything ( Read more... )

Sounds good! I know you've likely eaten already but incase you are faced with a similar situation in the future (seems likely with the CSA) I figured I'd still add in my $0.02 ( ... )

Looks like a great recipe! Dinner did, indeed, turn out great last night. Of course, for the 1/2lb of pasta I cooked, I had about three times as many vegetables. I could barely fit everything in the sauce pan to stir it all together and we'll be having left overs for lunch! The corn worked especially well since it gave off a very sweet juice when combined with the cherry tomato juice. Yum! I didn't even have to add any extra liquid. :-)I did add fresh basil and fresh mozzerrella (maybe too much!) and altogether, I was incredibly pleased. :-)

Huzzah! Sounds lovely and healthy. I'm going to be posting about my own ridiculously healthy dinner I just made tonight... so many veggies but it was really tasty!
