Generally, in designers, you want to see their thought process (well, with anyone.)
Find a terrible UI that you hate and have them redesign it. Forget photoshop, give them a whiteboard. If you'r talking about information theory ; flip through some Tufte books and look at the examples and see if they can point out the flaws in how some of the data is represented. Leading suggestions and questions are good, and how they take the input is particularly important.
How would you redesign Google's homepage? Given a table of data, how would you represented?
Can't think of a non-open ended test, but I think part of that is the domain; they're different over there in right brained land.
